do you roast to order ?

Kind of, generally we have a rough idea on volumes we need. Your order will go out the day after you have placed your order, but if we have had a Rwanda Monday and on Wednesday your order hits, your beans will be from Monday batch. We roast most days including Saturday, we don’t ship on a Friday. Friday is generally maintenance / other job day. When your beans arrive they will never be more than a few days after their roast date BUT this is a good thing and gives the coffee more time to settle / degass. Coffee peaks a couple of weeks from roasting and is more stable on grinding and extraction then.


Do you roast for espresso ?

No, but some coffees lean that way. We roast to where the coffee sits best. I would never discount a lighter medium roast behind an espresso machine BUT you are not going to get that Guinness like crema. Those dense little beans can be a pain ! So if you are looking for a good base espresso that is the foundation for all your coffee menu, maybe head for a natural or a medium roasted not to acidic rounded washed.

Do you dark roast your coffee ?

No, never, and there is a really simple reason. If you have 8 coffees on your roast list, and you dark roasted them all to a similar roast level. They all taste the same. If you roast the same 8 coffees to a point of a medium roast they all are wildly different. Obviously I am simplifying hugely, each coffee has a ‘ profile ‘ a recipe. A recent washed Rwanda after 1st crack whatever you did just went super dark really quickly and cupped ok but all end. A real sharp bitter unpalatable end, but way easier to extract etc. BUT if you stuck with a light medium roast wow, she way super fruity and just amazing. So in short, the agronomy and processing innovation create these amazing coffees. Our job is to showcase this.

what happens if my espresso machine isn’t liking your grind ?

Super easy, just pop it in the notes section. We do a generic grind but all coffees extract differently and all brew methods are not equal. So happy to play around, courser / finer till you have found what’s best.

where should i keep my beans / coffee ?

Not in a fridge, stick your head in and a last nights chilli or pesto will hit you. In a cool cupboard in an airtight Clan Tin of course ; ) You can freeze beans, ensure the container is sealed you defrost them properly.
